Fredy Orantes — Buena Vista
A high-altitude natural from Fredy Orantes in Fraijanes, Guatemala. Grown at 1,870 masl, this Catuai lot comes from a 7-hectare farm where Fredy combines careful farming with a strong focus on soil health and biodiversity.
Only fully ripe cherries are selected and slowly dried on raised beds for 25–30 days. The result is a clean, sweet and fruit-forward natural that reflects the character of high-grown Guatemalan Catuai.

Place the paper filter in the V60 02 and rinse it thoroughly with hot water. Then pour out the water.

Add 20 g of ground coffee and gently level the surface.

Start by pouring 60 g of water. Pour in a circular motion, trying to wet all the coffee evenly. Let it bloom for 45 seconds.

At the 0:45 mark, add another 60 g of water. Repeat this process a total of five times, waiting about 45 seconds between each addition.

Around 3:00, the extraction is nearing its end. You can remove the dripper from the server around 3:30, when the coffee is just dripping slowly.

Stir the brewed coffee in the server with a spoon to blend the layers together.
