We are opening a training centre!
Can I see it?
Patience you must have, my young Padawan.
We are opening a new chapter for Candycane coffee.
Welcome to our space dedicated to training both professionals and the general public.
We invite you to regular workshops and community events centered around coffee culture.
Last but not least, we invite you to the opening of our new training center, where we look forward to welcoming you on Tuesday, June 9. You will receive more details in due time.
Why a training center?
While the space at our Malešice roastery is great and we love it there, it was becoming difficult to balance roasting operations with training. So we came up with the idea of finding a separate space designed purely for training, workshops, discussions, and most importantly, for you!
You can look forward to the training sessions you’ve come to expect, as well as a few new additions, such as workshops on various topics. We’ll cover sensory evaluation, comparisons of different types of filter papers, acids and their effects in water, which gadgets truly influence distribution, and much more.
We also plan to use the space for open house events, where we’ll be here just for you – whether you want to stop by for coffee and a chat, discuss the latest trends in the coffee world, or maybe just come by to clean your grinder because it definitely needs it!
We’d love to spend our evenings here with you discussing coffee or broader culinary topics, touching on your perspectives on workflow behind the bar, hospitality, infusion and co-ferments, how to introduce people to specialty coffee, and more. And who knows, maybe we’ll even start a coffee book club!
Great! Can I reserve a spot somewhere?
All paid events will be listed in the designated section of the online store. For free events, we’ll use registration forms just so we know how many people are coming.
You’ll also find a monthly calendar on the website listing all the events for that month, so you’ll know what to look forward to.
Where will all this take place?
You’ll find us in Prague, in the heart of the Old Town, at Kozí 803/12. Before you head over, please check the calendar first to make sure we aren’t currently training coffee enthusiasts and closed to the public at that time.
We offer the following courses:
- Basic “Barista 101” Course – Do you want to explore the world of specialty coffee? Do you want to start working in a café and understand the terminology and basic hygiene practices right from your first shift? Do you want to learn how to set up an espresso machine and froth milk properly? This 3-hour course is for you.
- Espresso Course – Do you enjoy coffee and want to become a “better barista”? In this 4-hour course, you’ll understand the science behind coffee preparation, learn the principles of setting up an espresso recipe, practice frothing and the basics of latte art, and master the hygiene standards for coffee equipment.
- Advanced Espresso Course – Are you a professional barista or a business owner/manager responsible for coffee quality? Are you an advanced home user with ambitions to make coffee better than most cafés? In 4 hours, we’ll explain the details of recipe adjustments, verify our taste preferences using a refractometer, practice latte art in greater detail, and standardize HACCP procedures.
- Latte Art Course – In 4 hours, we’ll cover the theoretical principles of high-quality milk foam and the workflow for preparing milk-based drinks. In the practical session, we’ll focus on the basic shapes: the heart, tulip, and rosette. At the end, we’ll practice more complex shapes based on individual needs.
- Sensory Course – for anyone who wants to understand the flavors associated with coffee. Over the course of 4 hours, you’ll calibrate your taste buds to recognize the intensity of flavors. In a blind tasting exercise, we’ll reset our taste memory by sampling basic foods associated with coffee flavors and explain the connections between them. Based on our calibration, we’ll test our ability to distinguish flavor differences between filtered and espresso coffee.
- Filtered Coffee Course – Through hands-on practice, we’ll try 5 different recipes for brewing coffee using the Aeropress, Clever Dripper, and V60 methods. The course will help you understand the critical factors that prevent recipes from yielding good results at home or in a café. We’ll teach you how to adjust recipes based on your sensory perception of the coffee and help you choose the ideal brewing method for your home, office, or for serving guests at your business. The course lasts 4 hours.
