Oil on a coffee bean
The oil on the surface of coffee beans. What exactly does it mean, and how does it affect the taste and quality of coffee?
It is generally known that coffee beans contain water, caffeine, and other substances. Like many other seeds, coffee beans also contain amino acids and fats. These substances inside the bean primarily serve as a nutrient reserve for the future growth of a new coffee plant, should the seed be planted.
The oil, or rather the greasy film, on the surface of roasted coffee beans is composed of lipids. These are not fats in the conventional sense—such as sunflower oil, canola oil, or butter—but rather coffee lipids, primarily cafestol, kahweol, and linoleic acid (yes, that’s also an oil). These substances most commonly appear on the surface of the beans during darker roasts. Generally speaking, the darker the roast, the more “oily” the beans may appear.
Green coffee beans contain approximately 10–17 % lipids, though the amount varies by variety and country of origin. From a biological perspective, lipids are a natural component of the plant cells that make up the coffee bean. During roasting, high temperatures cause the cellular structures to break down. In light and medium-light roasts—roughly until the end of the second crack—the cell walls remain relatively intact, so the lipids stay sealed inside the bean. However, if roasting continues beyond the second crack—which is common, for example, with darker profiles for Italian espresso—the cell walls are significantly disrupted, and the lipids are gradually released to the surface of the bean.
The oily surface of the beans isn’t necessarily a sign of poor coffee quality—it usually just indicates a darker roast profile. After all, if you look inside the hoppers of coffee grinders in Italy or Spain, you’ll see mostly dark-roasted beans with that typical glossy surface.
Beyond their visual appearance, oily beans also have their drawbacks. The released oil can clog the burrs if the grinder isn’t cleaned regularly and thoroughly. At the same time, it can shorten the coffee’s optimal shelf life, primarily because the oil on the beans’ surface accelerates oxidation. It is precisely the oxidation of lipids that is one of the reasons why coffee can taste rancid, musty, or papery. Furthermore, darker roasts generally accelerate the aging process of coffee, indirectly contributing to the loss of subtler flavor nuances and masking the beans’ flavor profile.
You may also have noticed that some espressos lack crema. Crema forms, among other things, thanks to coffee lipids that are still trapped within the cellular structure. With very dark roasts, the resulting espresso may have little or almost no crema.
Does that mean the oil is always a bad sign? Not necessarily. If you come across light or medium-light beans with visible oil on the surface at a coffee shop, it’s worth paying attention—in this case, the coffee may be older or have been stored improperly. With dark-roasted beans, however, an oily surface is natural and doesn’t automatically mean poor quality. In a cup of such coffee, the roasting profile itself usually stands out more than the bean’s original flavor characteristics.
