Description

Recommended preparation

A Gesha from Fredy Orantes’ farm in Fraijanes, Santa Rosa. Still relatively rare in Guatemala, Gesha is a delicate variety that requires specific growing conditions and exceptional attention to detail. Fredy specializes in small lots and carefully manages every step from harvesting to processing.

Only perfectly ripe red Gesha cherries were selected for this lot. After picking, the cherries were soaked in water before being dried on raised beds for 25–30 days. During the cooler and cloudier harvest period, Fredy carefully turned the coffee each day and exposed it to the sun only during the warmest part of the day.


The result is an elegant and complex natural Gesha with pronounced sweetness, a floral character and a clean, lingering finish. A coffee that shows what is possible when an exceptional variety, high altitude and meticulous processing come together.

    Place the paper filter in the V60 02 and rinse it thoroughly with hot water. Then pour out the water.

    Add 20 g of ground coffee and gently level the surface.

    Start by pouring 60 g of water. Pour in a circular motion, trying to wet all the coffee evenly. Let it bloom for 45 seconds.

    At the 0:45 mark, add another 60 g of water. Repeat this process a total of five times, waiting about 45 seconds between each addition.

    Around 3:00, the extraction is nearing its end. You can remove the dripper from the server around 3:30, when the coffee is just dripping slowly.

    Stir the brewed coffee in the server with a spoon to blend the layers together.
