It comes from a farm located at 1,400 meters above sea level in Acevedo and was produced in collaboration with the Cuatro Vientos project, which connects smallholder farmers and supports the creation of exceptional microlots. The Castillo variety takes on a completely new dimension here thanks to an experimental approach to processing.
This lot is processed using the anaerobic natural method, which plays a key role in shaping its flavor profile.
