La Piragua is a family-run farm in Palestina, Huila, Colombia, where Arley Vargas works alongside his father, Alexander. Their shared passion for exceptional coffee and commitment to sustainability shape every aspect of production. On their 10-hectare farm, they focus on regenerative agriculture and meticulous processing methods that bring out the full expression of their coffee’s origin.
This lot highlights the rare and sought-after Pink Bourbon variety, a hybrid known for its refined sweetness, floral notes, and lively acidity. Grown at elevations of 1,600–1,800 meters and handpicked at optimal ripeness, it embodies the Vargas family’s pursuit of perfection. Each stage—from harvest to drying—is carried out with precision to preserve the variety’s delicate balance and complexity.
Arley applies a double fermentation process: 72 hours of oxidized fermentation followed by 98 hours of anaerobic fermentation in sealed barrels. The coffee then dries slowly in shaded dryer sheds for up to 20 days. The result is an exceptional Pink Bourbon with layered fruit character, elegant sweetness, and remarkable clarity—an expressive showcase of Huila’s distinctive cup profile.
