Villa Pastora is a family-run farm in Palestina, Huila, Colombia, led by Yulieth Mora and her family. The farm was originally founded in the 1980s by Yulieth’s grandmother, Pastora Anacona, who planted the first coffee trees and began a tradition that now continues into its third generation. Today, the Mora Ortega family honors her legacy by focusing on high-quality, differentiated coffees that reflect their dedication and long-standing passion for coffee growing.
Situated at 1,680 meters above sea level, Villa Pastora cultivates Pink Bourbon under diverse shade trees including guayabo, guamo, banana, citrus, and eucalyptus. The family is especially known for their carefully crafted natural coffees. After harvest, the cherries undergo 48 hours of oxidation, followed by 48 hours of sealed-tank fermentation. The coffee is then mechanically dried for 8 hours and stabilized for 14 days in a drying shed, resulting in a complex and expressive cup profile.
Beyond production, Villa Pastora plays an important role in the local community. The farm provides employment to local workers and supports neighboring producers by offering fermentation guidance and drying services. By purchasing cherry from nearby farmers and cupping every lot for quality control, Yulieth and her family act as a bridge between their community in Huila and international buyers, sharing both their coffee and their story with the wider world.
