Don Eli – El Salto Honey
The Montero family from Tarrazú, Costa Rica, are among the pioneers of the country’s Micro Mill Revolution. Founded in 2014, the Don Eli wet mill was born from Carlos Montero’s vision to process their own coffee and build direct connections with roasters. Today, his son Jacob leads the mill, focusing on innovation and quality while continuing the family’s legacy of craftsmanship and community leadership.
El Salto is a high-altitude farm located at 1800 masl in La Pastora, Los Santos. The cherries selected for this lot come from the best plants grown by the Monteros and their close neighbors. This careful selection ensures exceptional sweetness, clarity, and complexity in the cup — a true expression of Tarrazú’s renowned terroir.
Processed using the Honey method, the cherries are depulped with minimal water and nearly all mucilage is removed using a Penagos Eco-pulper with a mechanical demucilager. The result is a clean, elegant coffee with balanced fruit sweetness, refined acidity, and silky texture — a showcase of Don Eli’s commitment to excellence from farm to export.
