This exceptional coffee comes from Marysabel Caballero and Moises Herrera, renowned coffee producers in the Marcala region of Honduras. As second- and third-generation farmers, they manage nearly 200 hectares across 17 farms, all located near their central wet mill, Xinacla. Their deep dedication to quality has earned them recognition from competitions such as the Cup of Excellence and the SCAA “Coffee of the Year,” where they placed 3rd in 2010.


The coffee is a washed Catuai, cultivated in clay-rich soils at high elevations with wet, windy microclimates—ideal conditions for growing vibrant and complex coffee. Each farm’s harvest is typically kept separate to highlight the distinct qualities of the terroir. When lots are too small, the Caballeros blend them under the “Caballero” name, maintaining high quality and consistency in every cup.


The 2025 harvest boasts a cupping score of 86.5 and presents a beautiful balance of sweetness and structure. Expect notes of toasted black tea and hazelnut praline, followed by vibrant acidity with flavors of dark fruit, damson, fig, and milk chocolate. As it cools, you’ll find layers of caramelized red apple and warm spice, making this coffee a refined and deeply satisfying experience.
