Aponte Collective #2 is a stunning honey-processed coffee from the indigenous Inga community in Aponte, Nariño, Colombia. Grown at impressive altitudes between 2100 and 2200 meters, this coffee benefits from cool mountain air and rich volcanic soil. The farmers focus on traditional varieties like Caturra and Variedad Colombia, combining heritage with a dedication to quality that shines through in every cup.
The processing method is carefully designed to enhance sweetness and complexity. After harvest, the coffee cherries are stored overnight in burlap sacks to start a gentle fermentation. They are then pulped and fermented again for 48 hours in tanks before being sun-dried with their mucilage intact on "lona" tarps. This honey process preserves natural sugars, creating a cup that is both clean and richly layered.
In the cup, Aponte Collective #2 offers a chocolate-forward profile with structured malic acidity and a silky mouthfeel. Expect flavors of milk chocolate, vanilla, yellow fruits, and pears, making it perfect for espresso. With a cupping score of 86.5, this coffee is a beautiful example of the innovation and tradition coming out of Nariño’s smallholder farms.
