Yenifer Rojas Trujillo represents a new generation of dedicated Colombian coffee producers who blend deep family tradition with modern precision. Raised in Gigante, Huila, she grew up surrounded by coffee culture, eventually developing her craft through cupping classes and hands-on experience. Today, she manages her four-hectare farm, Varietales, perched at 1,750–1,800 meters, where ideal climate and rich volcanic soils provide the perfect environment for cultivating high-quality varieties—most notably her exceptional Pink Bourbon.

On the farm, Yenifer’s approach to processing reflects both discipline and respect for the raw material. Cherries undergo a carefully managed washed process, beginning with 12 hours of fermentation in tanks, followed by depulping and an additional 48 hours of controlled fermentation. Drying takes place slowly for around 15 days in a traditional marquesina, allowing the coffee to stabilize and fully express its character. This meticulous attention to detail ensures clarity, brightness, and a refined cup profile that highlights the elegance of the Pink Bourbon variety.

Roasted specifically for filter preparation, this lot delivers a vibrant and expressive cup. Expect notes of red grape juice, fresh berries, and delicate floral tones, creating a sweet, juicy, and aromatic profile.
