Don Eli – Jacob 


Carlos Montero is a pioneering coffee farmer from the Los Santos region of Costa Rica, known for his deep connection to the land and passion for innovation. Growing up among coffee trees, Carlos learned the craft from his father, Eli, one of the founding members of CoopeDota. After years of working abroad, Carlos returned home with a dream to combine his heritage with a modern approach — building Micro Beneficio Don Eli in 2014.


Today, alongside his son Jacob, Carlos produces some of the country’s most refined coffees. Their focus on precision processing, sustainability, and experimentation with new varieties has made Don Eli a symbol of Costa Rican quality. Each lot reflects their dedication to the craft — clean, balanced, and full of life, just like the people behind it.


Processed using the Anaerobic honey method, the cherries are depulped with minimal water and nearly all mucilage is removed using a Penagos Eco-pulper with a mechanical demucilager. The result is a clean, elegant coffee with enhanced fruit sweetness, refined acidity, and silky texture — a showcase of Don Eli’s commitment to excellence from farm to export.
