Camilo Merizalde is not your average coffee farmer. Originally from Colombia, Camilo got into quality coffee before many of us even drank our first real shot of espresso. In 1994 he began his coffee projects in his home country, but after much success, would later expand into other territories. Nowadays, Camilo operates coffee production in Colombia, Brazil, Mexico, and of course Costa Rica. He truly believes in quality details from soil to dry milling. That is why he is one of few producers in Costa Rica with such a large quantity of unique coffee varieties ie. Gesha, Ethiopia, Villasarchi, F1, Bourbon, Catuai, Caturra, Marsellesa.
Processing:
After collecting the cherries only ripe and by hand they are delivered to the wet mill for processing. They sort for the best cherries by passing them through a floating system. The cherries are then moved to sun-dried on the raised beds--where they homogeneously move it every hour until reaching a moisture content of 10.5.
