Santa Rita – El Salvador

We have a very small amount of this anaerobic natural from the Jasal family. It has funky fruit that is very distinctive in its characteristics. This rich coffee that the Salaverria family prepared for us is sweet and smooth, very easy to drink. We found mild fruits and winey notes when we cupped it.

The producer, Andres Salaverria and his family at Jasal mill, have separated out several small farms and blocks where they do extensive work on quality. They separate everything by days of picking and do different processes, fermentation, and drying techniques depending on the capacity and potential of the lot.

Santa Rita is a tablon (division) of a large farm Los Naranjos owned by the Salaverria family at the steps of the Santa Ana volcano. The secret behind these high-quality coffees is great coffee growing conditions that the landscape offer (soil, climate) combined with an exhaustive selective hand-picking process and innovative ways to process the cherries.
