This lot comes from Manuela Carmela Perez Domingo and her family. They have one small farm called La Penita which is located in the Huehuetenango region.  Through season they only have two pickings per year so they can focus on picking only red mature cherries. Manuela plans to continue focusing on high-quality coffee in order to ensure that the farm is profitable. They sort the beans with screens to ensure excellent quality after depulping, and then the coffee is fermented for about 24 hours. After washing, the coffee is placed on the patio for 6 hours a day, for about 6 days, until it is fully dried.

For Manuela and her family specialty coffee is still a new thing so as she says “Processing high-quality coffee is new for us, but we are learning bit by bit.” The quality of this lot shows that effort and they are on the right track to produce very delicious specialty coffees.
