Walter Villatoro is a second-generation coffee producer who inherited his farm from his father. It was originally a very small parcel of land, but Walter added more land bit by bit as he continued working hard, learning more about specialty coffee, and seeing success with the farm.

Lot info:
Washed, and sun-dried on the patio. This coffee is de-pulped and dry fermented in Walter’s ecological wet mill, and then patio-dried for 7-9 days. The farm name, La Joya, translates to “the jewel” - but in this case, it’s a colloquial word used locally to describe a small dip or valley in a mountainous area. The farm’s topography is a perfect example of a Joya.
