Gilmer is a farmer in Jaen, from the small caserio (village) of El Lavrel in northern Peru. Jaen is one of the most well-known areas now for specialty, and Jaen city itself has become the hub for coffee in the north.

The flavors of the coffees in this area simply speak to us. There are many farmers with great potential there, but most of them need some support on post-harvest processing to produce high-quality coffee. Gilmer is part of a program receiving that support.

La Cascarilla is located at 1858 masl. It's a small farm, just 1 hectare planted with 85% Typica and 15% Catimor. It’s a family operation, but they have up to 7 pickers helping them in the season. But yield per tree is generally low. The farm has a small beneficio where Gilmer processes the coffee.

After harvesting they will pulp and ferment the coffees in their micro mills at the farms. It’s normally a small pulper and a wooden or concrete fermentation tank. But many are also fermenting in bags.
This coffee is dry fermented for about 24 hours in bags before washed and rinsed, and then dried next to his house on a patio made of a black tarp. Drying takes about 10 days.
