Ixcu – Guatemala

Gaspar is a second-generation coffee grower from the Petatan area, with excellent coffee-growing conditions. The farm is named “Ixcu” because that is the Popti word for the place near the farm; it signifies that the place is surrounded by boulders and is home to many wild animals and birds.
From a young age, Gaspar helped his father on the coffee farm, including 25 years ago when his father first planted coffee. He worked hard as a migrant labourer in order to purchase more parcels of land so that he can now grow more coffee. Despite the challenges of a changing climate and a labour shortage in Huehuetenango, he continues to work hard to produce outstanding coffees on this farm.
Ana and her son work together to process the coffee that is harvested on their farm. Only a few hours after picking, the coffees are placed in the depulper at the family wet mill near the farm. They add clean water to the fermentation tank, roughly equal to the volume of coffee in the tank, for a wet fermentation of 32 hours. We believe this long, slow fermentation gives the coffee some of its unique flavour notes! After being washed, the coffee is collected and placed on the patio in the sunlight, where it receives 7 hours of sun per day.
