We find Wildan's coffees to be very unique and different from most other Indonesian coffees. They can be challenging to roast due to the special processing, but managed well they will taste really delicious and unlike anything else.
The goal of this lot was to create an anaerobic profile but clean it up with more brightness and transparency and make it a bit less wild with a more "sophisticated" funk. That definitely worked out! Expect a distinctive red wine-like profile with brown spice, vanilla, and medium funk.
Processing: Anaerobic Washed fermentation.
With lactobacillus added into the vessel while the cherry ferments for 4 days anaerobically. After that it's depulped then the parchment is fermented for 12-14h to remove the mucilage and finished as a washed coffee.
