El Pajal – Guatemala

dried apples, milk chocolate, almonds

This product is currently out of stock and unavailable.

The ‘El Pajal’ farm has its name because of the municipality the land belongs to. Julio’s father, Eliodoro Cano wanted to honor the municipality and gave their farm the same name. Eliodoro and Julio started producing coffee together. But now Julio has inherited the farm from his dad and is, therefore, the second generation of coffee producers on this land. In the beginning, he didn’t suffer much from pests and diseases, but in the past years, it was more challenging. He is constantly working on improvements that he can make and has observed that focusing on quality helps him a lot, to sell his coffee against better prices and therefore to have more to invest back into the farm. This is how he managed to keep his farm healthy and productive.

Fully washed lot of Bourbon and Caturra varietals. We pick this coffee as our basic filter option because of the sweetness and complexity this coffee has. You can drink it all day long.
