El Martillo is a medium-sized farm located near the Santa Ana Volcano, at an altitude of 1700 meters. It is one of many farms owned by the Salaverria family. Jose Antonio and his sons have been growing coffee for six generations. There is no doubt that they have coffee-farming in their blood, and his family is a guarantee of significantly better coffee than one would expect in Central America. Thanks to high demands on the resulting quality and constant supervision of the entire process, they have managed to improve the quality of their coffee quite a bit in recent years. They are also increasingly engaged in various experimental processing methods on their farms. Harvesting is done by hand and nothing but ripe red cherries are accepted. The Salaverria family also owns two washing stations, where they process their cherries. Drying coffee beans is more complicated in El Salvador because the climate is not so hot and stable. This leads to experiments with shaded drying on different materials so that the resulting cup of coffee has the cleanest taste. So don't expect anything other than classic El Salvador - full of sweet taste with tones of black cherry, red berries, and chocolate.
