For our fifth anniversary, we decided to go where no man had been before. Ethiopia's Guji region is well-known and popular with coffee drinkers, but this time our scanners picked up previously unidentified signs of processing!

Pile up, as Nordic Approach named this method, is the result of the Sakicha station's efforts to improve the quality of fermentation. In one of the processing steps, the coffee is piled up and packed (hence the name - pile up) in a 15-20 cm layer and controlled fermentation takes place. After this stage, the coffee is processed through a natural process
