Danche Anaerobic – Ethiopia
Strawberries with whipped cream
Our new crazy anaerobic natural Ethiopian coffee comes from Danche, a washing station in Chelbesa, Gedeo.
This is a limited-edition coffee that is crazy good fermented, funky and full of flavour. The most intense one is our favourite summer dessert strawberries with whipped cream.
SNAP owns two washing stations in the Worka Chelbesa village in Gedeb: Chelbesa and Danche. This coffee comes from the Danche Washing Station, which buys cherries from 742 farmers. The farmers’ plot sizes are 1-2 ha on average, sitting at high altitudes of 2000-2300 masl.
The cherries of this lot are hand-picked and sorted. They are then packed tightly inside large plastic barrels where an airlock system prevents oxygen from entering. After 144 hours in barrels, the coffee is removed and laid out on 150 raised beds with the cherry still intact. It is dried slowly for up to 10 days.
